WINEMAKING

The grapes were harvested in the cool morning, transported overnight to Capella Vineyard, and gently pressed whole bunch. Fermented with wild yeast in a blend of new and seasoned Burgundian puncheon barrels, partial malolactic fermentation enhanced the wine's delicate acidity and balance. After fermentation, the Chardonnay matured in the same barrels for 11 months before blending.

Tamar Valley, TAS, Australia.
This wine was grown at our Auburn Road Vineyard - on the west bank of the river has weathered basalt soils with mineral variation that produces great flavour complexity. NASAA Organic Certified site since November 2022.
