The Yarra Valley has a long pedigree of refined Cabernet Sauvignon wines. This is a great example of the style – medium weight with red and black fruits, a touch of leafy freshness and fine tannin.
Vintage 2016 was a warm, dry season in the Yarra Valley and yields were around average. Harvest was up to a month earlier than long-term averages and arrived very quickly.
The fruit was picked in mid-March, a very early start for Cabernet. It was destemmed then vinified in overhead fermenters with pumping over. The wine was aged in tank for 15 months on quality French barrel staves.
One of Australia’s premier cool climate wine regions, the Yarra Valley encompasses such diverse topography that it can produce premium quality fruit in a range of grape varieties.
With its stunning hills and dales ranged before a backdrop of blue mountains, elevations vary greatly. The climate is Mediterranean with a maritime influence from Port Phillips.
