Like all good cheeses, Blue Stilton is best served at room temperature (20ºC - 68ºF) The loss of moisture from the cheese as it matures is the key to its character: moisture content dictates not only texture but the acidity and therefore flavour. Stilton is a moist cheese - hence its creaminess. The sharpness mellows into a buttery background of lactic sweetness & fruitiness. Although a strong blue, it was light in the mouth with excellent body and texture and a mellow, velvety flavour having beautiful deep, rich notes

Our Margaret River Cab sav is one of our more intense wines, the meaty, smokey notes from barrel aging work wonders with the subtle, meaty anatto notes found in the cheese paste. The rind also pairs incredibly well as it pairs the cocoa flavour in the rind, with the dark fruit of the wine.
