Shaw River Annie Baxter 'Special Reserve'
Each wheel is meticulously cared for during 6-months of maturation. A thin, natural rind develops, surrounding a dense, white interior with an open texture. When young, the cheese has just the right amount of salt to accentuate a fruity profile perfect for a cheeseboard. As it ages, the flavour intensifies, taking on a nutty character with a more pronounced acidity.

Our nero d'avola is nothing like the traditional sicilian number, which is why we pair pair it with the milder Annie baxter reserve. The soft tannins, and delicate fatty flavours of the buffalo milk cheese make for a silky smooth pairing, crammed full of umami.
