With a wonderful combination of both milks, this cheese has a fudgey texture classic of a semi hard alpine cheese with a creamy nuttiness, yet a cleansing acidity coming from the goats milk. Definitely one of the top mixed milk cheeses.

Regional Selections Yarra Valley Rose
An Ossau Irraty style of cheese, the onetik is made from sheeps milk, this produces a very fatty texture with a mild nutty, creamy flavour. Contrasting this with a crisp pallet cleansing Pinot Noir Based Rose brings out the fruit of the wine and cuts through the fatty texture of the cheese.
