Although the recipe for the cheese is very similar to that of a Cheddar, Hafod has its own distinctive rich, buttery, nutty flavours with a dryness and crumbly Cheddar-esque texture due to the Welsh terroir. This cheese has a tendency to bluing due to the age and richness of the cheese, this is considered a bonus among many hard cheese lovers and is nothing to be concerned of. The cheese is clothbound and made in 10kg wheels and matured for 10 – 18 months
