Coulommiers

Rouzaire Coulommiers is almost identical to a Brie with a difference in size being the only obvious change. However, the milk is also subject to a gentle pasteurisation which reduces the salt levels in the finished product. Its interior breaks down from firm and chalky when young, to rich and bulging when ripe. A creamy mouth-feel delivers flavours that tend to be rich and buttery, finishing with a slight sour note on the palate.
