The soft, but obvious tannins and forward fruit of the Merlot are both strong and subtle enough to work with the truffled salumi. The juiciness of the wine will cut through the fat, leaving the deeper, longer lasting flavours to play on the pallet for some time. An exceptional finish to this pairing.
