This Salumi is made from beef, from Valtellina where producers must follow strict rules passed down through generations. All the fat is trimmed until it's completely lean, and then the meat is massaged with a mixture of salt and spices. With a beautiful soft texture and delicate flavour that hints at the spices and herbs used in the cure.

Margaret River Merlot
The soft, but obvious tannins and forward fruit of the Merlot are both strong and subtle enough to work with the truffled salumi. The juiciness of the wine will cut through the fat, leaving the deeper, longer lasting flavours to play on the pallet for some time. An exceptional finish to this pairing.
