From one of the coolest regions in New South Wales, this wine has luscious black fruits with background spice, fragrant toffee oak and rounded tannins. Soft and generous enough to enjoy on its own, this wine will complement meat dishes such as beef casserole, pepper steak, beef hotpot and spare ribs.Download Tasting Notes
The 2015 season in Hilltops was very warm with intermittent storms. The cool nights helped draw out the ripening period so that Shiraz fruit was allowed to develop rich flavours with good structure.
This fruit was picked at full ripeness and was vinified in open fermenters with hand plunging and pumping over. The wine was matured in French oak barriques, 25% new, for 12 months.
