Vintage 2015 was excellent for the Mornington Peninsula, producing wines with excellent flavour and structure. Yields were good and after a cool start to spring, the season warmed to near perfect conditions for ripening of Pinot Noir.
Our Pinot Noir harvest began in the first week of March. The fruit was destemmed, sorted by hand then fermented in small open fermenters with hand plunging. Select parcels were cold soaked to enhance extraction of colour and flavour. The wine was matured in French oak barriques, about one-third new, for 10 months.
