Vintage 2015 was excellent for the Mornington Peninsula, producing wines with excellent flavour and structure.
The fruit was destemmed, sorted by hand then fermented in small open fermenters with hand plunging. Select parcels were cold soaked to enhance extraction of colour and flavour. The wine was matured in French oak barriques, about one-third new, for 10 months.
