THE FINER DETAILS
This is a characteristic Coonawarra Cabernet with aromas of blackcurrant, red cherries and dusty oak. It has excellent structure, generous berry fruit, sturdy oak tannin and a clean acid finish. It will complement a range of hearty and flavoursome foods such as beef or lamb hotpot, barbecue, stir fry or casserole.
Summer was hot and dry, but good canopy cover protected the fruit from heat damage and sunburn. Initial fast ripening was tempered by the cool nights and moderate days of autumn so that Cabernet fruit benefitted from a long, slow ripening period. Harvest was in late April.
Our fruit is from select vineyards where the vines are aged between 20 and 50 years. The wine was matured in a mix of old and new hogsheads for 18 months. We use predominantly American oak, with some French and a small amount of Hungarian.
